Sweet onion tart

one of my favourite vegetable tart

Life is like an onion.  You peel if off one layer at a time, and sometimes you weep

One of my favourite vegetable tart: crispy and tender, this tart is so delicious!  I love onion tart, especially this simple vegan recipe.

Ingredients for 8 servings

1 homemade vegan shortcrust pastry (effortlessly with food processor)
2 tbsp mustard
2 tbsp oat cream
2 tbsp of vegetable oil*
6 sweet onions, finely diced
2 pinches of dried origan or thyme
1/2 tsp brown sugar
salt, pepper (optional)
optional: 8 sliced vegan cheese, 5 mm  thick (Camenbert, Brie or Raclette)

Preparation

  1. Preheat the oven to 180° C.
  2. In a large pan, in medium-high heat, sauté the onions with a pinch of salt (to sweat the onions easily) and and fry very gently for 15 mins, or until meltingly tender, and golden in colour, and set aside to cool
  3. Meanwhile, line the dough with parchment paper (on a 30cm tart tin).
  4. Add mustard, cream, mix and spread them with a tablespoon over the base of the pastry.
  5. Add onions, and sprinkle dried herb, sugar on top.
  6. Bake for 30 mins.
  7. Then take out the tart and add sliced cheese, and bake again for 5-10 mins.
  8. Serve with salad.
* I'm going to stop using olive oil :
  • first, it is more and more expensive and above all, olive oil scams are proliferating
  • if it is not scammed, the study found traces of mineral oil-saturated hydrocarbons and mineral oil aromatic hydrocarbons which can migrate into foods during production and transportation (organic or not)... and it accumulate in the liver and lymphoid system of the body, causing inflammation
