Kiwi and apple tatin my way




 
Well, not to brag, but the only real difference between this and bricks is that you call it a tart! - Léodagan (Kaamelott, French comedy medieval fantasy television series) 😁

I had 4 kiwis that wouldn't ripen even after sitting on the counter for weeks; they stayed hard.  I almost threw them away.  It's suspicious; I wonder if it's due to some kind of preservative...
While searching online for inspiration, I saw we can use them in tarte tatin; this tarte tatin my way.

Ingredients

25g vegan butter
2 peeled and quartered apples
5-6 tbsp caster sugar (about 70-80g is enough)
1 pinch of salt
4 peeled and quartered kiwis (remove the hard white core)
1 sachet of vanilla sugar
1 sheet of vegan puff pastry

Method

1. Heat a non-stick frying pan and add the butter.

2. Add the apple quarters and cook over medium heat for 10 mins.

3. Turn the apple quarters over, add the sugar and salt, and cook for another 10 mins.

4. Arrange the kiwi quarters in the baking tin.

5. Sprinkle with vanilla sugar.

6. Distribute the caramelized apples and cover with the puff pastry.

7. Prick the pastry with a fork (to ensure even baking) and bake for about 30 mins at 210°C (410°F).

I left it in the oven for about 10 mins with the door ajar before unmolding.
=> A few kiwi wedges remained in the pan, but otherwise everything was perfect.

Update

I just tasted this tart: next time, I'll mix the kiwis directly with the caramelized apples at the end of baking because they're still quite tart.

Tip

To speed up the ripening of kiwis: place them in a plastic or brown paper bag with one apple or one banana for 2 days.

I imagine wrapping them in newspaper also works, like with some fruits...
