Steamed banana pudding

Mom's recipe


This banana cake is the tastiest way to use overripe bananas.  My mom used to make this really simple steamed banana pudding.

Ingredients

6 ripe or overripe bananas
6 tbsp rice flour
1 tbsp glutinous flour
1 tbsp cane sugar
1 pinch of salt
200 ml coconut cream

Method

Mash the bananas thoroughly with a fork until smooth
Add sugar and mix well
Add the flours and salt and mix well
Add gradually the coconut cream to obtain a slightly thick cream consistency
Pour into a 24 cm springform cake tin (Pyrex)
Bake in a water bath in a 200°C (390°F) oven for 45 mins, covered with baking paper
Remove from the oven, let cool, and cut into squares

Note: in the original recipe,

  • fresh coconut flakes are added to the batter, and once the cake is baked, they are sprinkled on top as a decoration
  • it is baked in portions in small baskets made from banana leaves
  • cook in a covered water bath for approximately 20-30 mins
