In 812, Charlemagne called spices and aromatics the friend of the doctor.  He gave a list of 74 good herbs that were to be grown in the imperial gardens - Jean-Claude Rodet (Vertus médicinales des plantes aromatiques - Medicis - 2012)

Harvest

Since 2020, I've decided to harvest herbs in May instead of in September, they can continue to grow and thrive better than in cold season.
I did it in September because I wanted to keep flowers for bees and others insects.  Bees love thyme, rosemary, oregano, and also clover.
But as I don't need a lot of herbs, I just can harvest some thyme plants and let the rest for these essential species.

Drying

Harvest herbs late morning on a sunny day while the leaves are still saturated with flavor but without dew.

I wash and drain them quickly (with a salad spinner).
For chives, I cut them before drying.
I place thyme and rosemary on a clean tea towel, then after several days, on a tray lined with newspaper, indoors, away from light.

Preservation

After about 1 month, I crumble and store them in a recycled jar.
