I love vegetables, delicious and healthy, what else: steamed, roasted, baked, infused with aromatic herbs, spices, and oils, or not, really yummy, just by themselves!
There are some, I don't like or not so much: fennel, pumpkin, parsnip, Jerusalem artichoke; some depend on the dish: I like carrots, tomatoes only cooked...
Cabbage,
especially Napa and Flat cabbages:
a superfood, highly nutritious vegetable, packed with nutrients: rich in vitamin C, B K, fibre, proteins and antioxidants

Lettuce,
especially Battavia and Sucrine:
there are over 20 different types, in different sizes and shapes and available throughout the year; most of them contain a significant amount of vitamin A, K (healthy strong bones and proper blood clotting), and also contain small amounts of vitamin C and iron

Mushrooms,
only the Button ones:
an important source of nutrients: vitamins B (B2, B3, folate, B5), D, phosphorus, selenium, copper, potassium

Potatoes,
especially the floury ones:
rich in vitamin C, which is an antioxidant, and also in potassium (more than a banana), an electrolyte which helps brain, heart, muscle function, and nervous system.
