Simple courgette tart
Make friends with veggies
I once tried a courgette tart recipe with a vegan cream cheese spread but I really didn't like it, tasteless.
Then I replace it with mustard and oat cream as I love it with onion tart (or then, even just with mustard).
And with organic zucchini from my parents' garden, absolutely delicious!
Ingredients for 8 servings
Rectangular tart tin 21 x 31 cm Pyrex
1 tbsp mustard
1 tbsp oat cream
5 small courgettes (zucchini), cut into 7 to 6 cm lengths (as organic, no need to peel)
5 spring onions or large chives, finely chopped
1 tsp thyme
1 tbsp grapeseed or rapseed oil*
1 pinch salt
optional: pepper** and vegan cheeses (Raclette, Mozzarella)
Preparation
1. Preheat the oven for tarts (mine is 240° C and with the rack at the bottom).
2. Line the dough in the tart tin previously greased with oil and covered with flour or with a parchment; pierce the bottom with a fork; keep in the fridge for only 5 mins*** (with this method, no need to let the dough to relax in the fridge for 30 mins or more, and the pastry is crispy).
3. Add mustard, cream, and spread it evenly with a tablespoon over the base of the pastry.
4. Arrange the courgette in one tight layer.
5. Sprinkle with spring oignon, thyme, salt, and drizzle of grapeseed oil on top.
6. Bake for 30 mins, until the pastry is beautifully golden.
7. If needed, take out the tart, add cheese slices, and bake again for 2-3 mins, until cheese is melted.
Serve with a salad.
* I'm going to stop using olive oil :
- first, it is more and more expensive and above all, olive oil scams are proliferating
- if it is not scammed, the study found traces of mineral oil-saturated hydrocarbons and mineral oil aromatic hydrocarbons which can migrate into foods during production and transportation (organic or not)... and it accumulate in the liver and lymphoid system of the body, causing inflammation
** I can do without pepper in any recipes except for Cacio e Pepe recipe😁
** only 5-7 mins in the fridge then bring the pastry up to room temperature before baking, to avoid putting a cold glass tart tin straight in a hot oven
